This "dual purpose" crop actually has three great uses. It's roots are a delicious addition to any soup, stew, or casserole that calls for carrots (and are loaded with vitamins and antioxidants). The leaves are used like traditional leaf parsley. And the plant acts as a great companion plant for tomatoes - the wasp that kills tomato hornworms likes to feed on its nectar.

Rooted parsley has been eaten in Europe for well over 1,000 years. This variety was identified in the 1500's and continues to be the most popular root parsley available.
